2000 fonts is too much, but instead of deleting use some sort of font organization program to activate/deactivate fonts as you need them. I believe Corel offers a Bitstream font navigator program on the CD - not sure I'm an Illustrator user.
The fewer active fonts the less likely you will see...

pretty good for a 19" monitor, I bought a 19 crt a few years ago for $400 and that was a good deal at the time.
Those drop shadow effects are in fact raster even though the shapes they are applied to are vector. You did not mention what other effects were applied, but all of those things add quite a bit of code to your eps file.
Stacy, are these Mac fonts? I thought you used a Mac. If they are Mac fonts, ps fonts are not interchangleable between platforms. Only TTF and Opentype (OTF).

hard to believe a printer can't load atm on their machine. It's free, and unobtrusive. And how can you be in the business of outputting customer print files and not support ps fonts? Like a carpenter without a hammer.
The other problem is most people don't know what it looks like when blown up to large sizes. They ask, what is wrong with the edges - why so bumpy? Looks ok at business card sizes. Sometimes outlining it makes it worse.
