you must be connected to the internet at the time of looking for the font. That was an issue I had once where it was grayed out and once I connected, it was available.
I agree with Gino - looks like static. Try the simple fix, turn off your machine and unplug it for 5 to 10 minutes and then plug it back in and start it up. I have seen similar prints before that were solved simply by letting all of the charge on the boards disapate and release any static.

a strong clean will purge the ink in the head, the dampers and the volume all the way back to the print cartridge. If nothing else, it is wasteful and not necessary to get a good head cleaning.
I can't see any banding either. +1 on going with the Roland inks! The problem you perceive may be due to the inks that have never given you trouble until now.
In versaworks you can see the ink consumption for the job on the main panel in the area about that has all of the info on the selected job. It will be in cc units which is cubic centimeters. 1 cc = 1 ml. Pick a job that is of the size you are looking for and base your figures off of the data...
