I tried win11 and I do not recommend it. You might want to go with your win10 IOT plan, or figure out how to switch to Linux. I think it's all downhill from here for windows. Just swap SSD and try it yourself to see.
I bet I could print BOTH shades of that cyan your showing on the left. The shades in the left column are not impossible to print. Maybe only impossible if you strictly follow their CMYK values, and can't tweak.
I don't think that matters. S365 has a box where you type in what PMS colors you want them to use. I type in Green=PMS999 Red=PMS888, etc. etc. I don't think they use just what's in your file, unless you don't specify any.

I think it would stick much better on metal instead of the glass, if it needs to be that thin. I've stuck extremely thin 3551RA on doors and it stayed on. But on your design if you thicken it just even a small amount I think it would hold much better on the glass.
