Since your not connecting your printer directly to the internet your DNS server setting in the printer should be your Routers address. Let your Router handle outside DNS server addresses.
The easiest thing is to just create a new output profile. And, like Bly said make sure your ink density is high enough. I would start with 120%, and make sure your optimizer is set in your media preset to between 8 and 12.

I would get after your RIP support people. There is no reason you should not be able to center your print on the media. The two RIPs (Fiery XF and ColorGate) that I have used the most on the L360 and the L25500 before had no problem centering the print except in cases of nesting or containers...

Maybe you haven't found the right papers. I found Endura papers work well, and also papers form Milano I have found to work as well. If your going to use standard aqueous coated papers your not going to gain anything by using the Latex anyhow given their delicate coatings.
