For the price of the machine..the dealer should be out giving you a hand, especially if its new.
Maybe post some pictures so people can see what it looks like and give better advice. But personally... I'd ask the people who sold you...

You can. The latex is just more scratch resistant... So if you're not going to laminate it comes out ahead of the Epson.
They both pretty much do the exact same thing with very minor differences. Send your files to some vendors and ask for samples printed, see which you like more.
Bn20 sucks. It prints OK but the speeds are slow and your media is limited.

There's a few brands out there... But it's expensive. Much cheaper to use solvent or latex.
And Illustrator can do images as variables as well.(Not sure if indesign can?)

Yup. "Variable1, Variable2, Variable3, Etc". Pretty much the easiest way to do it is to create an action that will bind the text to a Variable#... Hotkey it... then you just press each textbox with the hotkey and it'll number them sequentially.

Yup, which is doable. We do 100 up (roughly) as thats what fits on a 4x8, and 5000 at a time... So it export 50 4x8 setups. with illustrator you can do thousands of variables per setup if you want... I think the more variables per dataset the slower the import is, but we've done 1000...
I'll post our illustrator and csv file tomorrow so you can play with it and get an understanding of the setup. I think we export 100 at a time.... And it takes about 5 mins to cycle through and make 100 files for printing. Should only take 10-30 seconds to export yours once you have a csv setup!

White ink is great for stuff like acyrlic, clear decals, multi-sided decals, etc. We usually screen print all those just because we can flood it with white... Then if it isnt screenprintable, we usually have to sheet the back with a cast white, which is pretty expensive. White comes in handy...

We've done hundreds of rolls on ours and it isn't having issues.
For the size fix you need to do a manual calibration after its on the take up reel. We still get a few that's a bit off...but it's a traffic. Sign. If the borders an eight of an inch off its not too big of a deal.
