Your right there is no bottom roller in the middle.
Look like something contaminated your rollers with plasticizer. Were you using ultraflex media at some point.
You have removed and cleaned the rollers with alcohol at some point haven't you?
Have you tried replacing those roller? You should have extra ones in the cleaning/lube kit that came with the printer. Or you could swap out with some on the extreme left side.
It would be nice to have feedback on here about the difference in the ink density settings and how that effect output on the 560 compared to the 360/365. What benefit the two optimizer pens printheads are, etc.
Most likely you are correct about the HP printheads. But Canon has a very consistent thermal printhead. But at this point if you want to go latex the HPs really your only option.
I would advise you to read through the threads on here. Especially the ones about color consistency.

Moisture might also be contributing to this as well. You might want to back the optimizer down to around 10 or lower if that doesn't cause coalescing. And, try maximizing the air flow. Then you can work on the Pass-Heat-Ink Density combination.
After all this time I can't see why Adobe has not implemented the Effect as they behave in Indesign into Illustrator. They stay vector in the exported PDF from ID providing you don't set it to flatten.
