I would not advise printing & applying them to blanks unless you really just need the work, if so do what you need to do to make it happen. There will come a time that you will be able to purchase a used flatbed and print them in-house. Until that day... I would suggest to sub them out and...
We charge $150 per hour with 2 men / 1 bucket with a 2 hour minimum. Time starts leaving the shop and ends when truck returns.
It's fair in our area and you're not that far from us. I've seen rates from $125 to $180 per hour for 2 men / 1 bucket.

Trello looks good for tracking progress and having multiple people update a project. We like SignTracker for creating the invoice and tracking the overview of the project. But we are looking into new options there as well.

I like to have a digital version for tracking online, but the analog system that WhiskyDreamer shows above is always a good thing to have for the process as well. Combined makes it easier to update the analog daily and then update the digital for the overview of all projects.
