Interesting self reflection.
I have been giving some thought to a similar challenge I have with myself.
I am also what some people call a perfectionist or "fussy", although compared to the way my father was I don't feel even close to the far end of the spectrum, but I'm sure that others see it...

When cutting off excess laminate you can gently push the side of the blade against the media to use a guide so it leaves the full width of the media. Just cut slow so if the blade jumps on the media you have time to stop the cut.
This works well on my glass top table. I've never used a cutting...
Don't worry. With a $300 plotter you won't be making much money.
I bought a $1,000 unit from Sign Whorehouse (24") when I first started 3 or 4 years back and it still works well. But I don't know of any units that cheap that I would expect to be much more than a paper weight after it breaks.

I quite often do store front logos for customers, but they get the suppliers permission and sometimes co-op advertising dollars from the supplier to do so.
I have acquired the logos from the company themselves, online sites, such as brands of the world etc. and even have drawn them up myself...
