It's not hard to change the print heads at all. Just take your time and dont forget to unplug the printer before you start taking it apart otherwise you will be replacing fuses also which is a little more tricky.
Just do what I did, buy a Roland! I gave up with my Mutoh when I realized I was spending a ton of money repairing it and losing customers. I hit a point where I decided that I either had to buy a new printer or close down the printing end of my business. So my new Roland is in and prints...

I had to lol when I saw this post because I have a customer that is exactly like this and they had me do coro signs on their building also. They were not as big as yours, only 4x8 but I used 10mm coro and I attached it to the building with liquid nails.
