Good suggestions above ^^^ Also, is your printing environment climate controlled? As the weather heats up and humidity begins to rise, if your shop is not climate controlled it can affect the print quality.
Run a cleaning cycle and watch the waste tube. If no ink flows out of the tube, you have an ink flow issue. If ink flows out of the tube but the nozzle check still doesn't print, you have a blown head fuse.

I think you will find that cutting posters will not only dull the blade much more quickly but the edges will not be as sharp as you want. It is doable and I would just use the perf cut options but if I needed to cut posters I would just get a javelin cutter.

Error 07 is a high heat error which means your environment is too hot or, much more likely, there is a short in the head signal circuit. Check your cables and make sure they aren't damaged or dirty. If they are nice and clean and it still gives you the error, it's most likely the head itself.
A lot of vinyl manufacturers will have a chart that matches the color with a Pantone color. You just have to ask them. You probably will still have to do some trial and error to get it right.
