Depends on exactly what you're doing but I'd say almost everything a typical sign shop does can be handled very capably by a $200 scanner, especially since these days most customers can provide digital artwork more easilly than hard copies anyway.

Take an Old Bay seafood seasoning bag, put it in a pot of water, bring it to a boil, let it cool and marinate your beef in it. Works great for chicken on the grill, too.
Forget the liquid marinades and start using dry rubs. The taste is better and it's a lot easier to control the amount of flavor you cover the meat with. Most grocery stores carry a bunch of different premade rubs (keeps you from buying a bunch of spices you may or may not ever use again)...

If you're doing the same thing as the established shops you won't be able to compete. The chances of you surviving long enough to build up clientele are slim to none. If you don't already have the skill set to compete you're in for a long, painful learning curve before you're proficient enough...

I've got an Epson Perfection V30 Flatbed Scanner ($60) and a Canon Pixma printer/scanner combo ($40) that both outperform the $1200 Canon Art Scanner we bought 8 years ago and the $600 Microtec we replaced it with.
All in all it's okay, they're just chipboard coasters. The artwork for the cactus and the "plants?" really could have used some work but I don't know if they had the budget to do it better.
When my twins were born we had labels made for their bottles. I had Signs365 print them using Oracal Orajet 3651 with lamination (the cheapest printing they do). Those bottles got washed in the dishwasher almost daily for 18 months and we never lost a label. We're currently using them on...
My biggest pain is a fairly local pan face supplier. Twice now I've gotten in faces from out of state, lettered them and installed them BEFORE the local people even got their quote faxed to me. I'm not talking complex here....just a simple set of 3' x 10' pan faces.
