You can make a spacing tape, a 1" wide strip of paper that has the bottom of the letters marked, tape to wall and apply letters. Gemini had these, you can see how they work on their site.
The other thing is to do a paper "stencil" and cut out the letters. No need for centers.

And you forgot sales time, travel time and cleaning the surface.

Unfortunately there were a lot of short lived ADA/Office sign system vendors back in the 80/90s

They can't make a pattern once the letters are shipped, a PITA to do it yourself, but not the end of the world.

Why a new sign? Is the name changing? The old one doesn't look that bad in the photo (at least the material doesn't look bad).
If it has to be replaced a carved sign should be the first suggestion. If budget isn't there then at least a thick sign so it doesn't look cheap.
