Not sure how it would go on routed letters, but you can buy liquid mask and peel off afterwards. Can't think of the name of it, but we used it in a panel shop to mask over stuff we wanted to keep on motorbike tanks etc while spraying the rest, also used for airbrushing.....Google brings up a few.

Pistol we never experienced the problems the Sates had with US made Avery as our Avery vinyl comes from Europe. I once worked for one of the largest corporations in Australia and was always told not to admit "guilt or fault"...let the lawyers sort it out, I would say that Avery may have used...

What about a cut throat razor, I just googled "cut throat razor vector" and heaps come up. If not just try razor vector. Edit....razor vector come up with all types.

I do all the work for local panel shops here and if the paint is 2k and has been oven baked you can apply vinyl straight after its cooled down. NEVER had a problem. If your worried at all, wait for a day. Backyard paint jobs are a whole different story.
