In my opinion and experience, you need the 3M 680 as it is designed to be conformable.
Per the JSI website, the 8100 series is "..designed for use mainly on commercial signs and various labels".
Many different brands will do the same thing as the consistency of the face stock can vary from lot to lot. Not uncommon for one color to cut perfect and another not.
More than likely a new batch the has some minor inconsistencies.
I believe there is a patch for that issue....

you have one computer with XP, Flexi and a cutter physically connected
you have one computer with WIN7, Flexi and a cutter physically connected
or
you have both cutters connected to one of the computers
??
Start simple... ignore the network. Try to cut from XP computer to cutter...

Most any Roland dealer would be able to get them from Roland, but doubtful they would stock them.
What parts other than power switch, that you may be able to pick up at RadioShack or consumer electronics store..?
Blade Holder, Protection strip OR the cut head assembly has a little play in it.
Most of the time, protection strip. Sometimes the blade holder. And rarely the loose cut head assembly (but still possible)
