Hitting vinyl is 100x better than hitting aluminum. A hump in the material will raise the guide plates up and then the head will crash on them.
Bending a small piece of metal on the carriage shouldn't be an issue as long as it isn't part of the head.
Something is out of wack. Might be the head bearings are shot or it is really dirty?
I'd remove the guide plates for now if your machine will allow it.
Turn it off and move the head across manually and see what is going on.
I've been a designer / production manager for years and dealt with all kinds of printing... however - I'd probably never apply to a job looking for a video to be sent in, as I never deal with video.
My honest advice is to keep an ad out there just in case someone who is unhappy at their current...
Start out with a spreadsheet if you have to and assign all jobs a unique ID number. That way you have a job identifier for when you need to go back and locate it later.

Since you're applying to powder coated parts I'm assuming these are print/cut decals, and not something where the customer actually needs the flexibility/air release of 180c?
I would recommend using Arlon DPF8000 for this if so. We do a lot of equipment graphics and use DPF8000 and 3M 8518 Gloss...
I've never seen humidity cause an issue like this before, but possibly if your shop isn't climate controlled well then the roller on the laminator might be warped from the humidity? There might also be to much tension on the laminator?
We've had our Epsons for about 4 years now and everything you will need to do (besides replace parts - keep your service contract current) can be don through the normal menus. Calibrate your media feeds on the printer and keep a few settings saved, but otherwise you wont need to do all that much...
I save my files as EPS files from Illustrator and use a "PDF Import Filter" as my import setting and everything has always been there when I import it to my router software.
That is not the proper install method for that type of groove. This is more of a bridge, heat, press in type of install as these are not deep grooves so no extra material is required.
I've ran them all, started with solvent, tried latex, went back to solvent.
We're currently running a couple Epson eco-solvents and plan on our next purchase to be another Epson S60600.
I do not recommend the 10-color printers, the 4-color dual head printers are much better.
