I really like my Epson S80!! But there you would be into a 64". I know of several people that really like their Mimaki's too. What you can get quick service for in your area is a key factor too.
I will do the die cutting for the shapes, then tell the cutter to perf cut them into strips. Then all I have to do is roll them up. Not too hard for me anyways. I always make sure to keep my tubes from heat press material. It seems to be a lot thinner and easier to cut down to use as the core on...

I moved an sp-300 up some steep stairs once. I just secured the head and went. I don't recall having any issues when I plugged it back in. Just go as fast as you can. I'm pretty sure I went so the head side went up. Figured it'd be better than the ink running towards it. Make sure you drain...
I too have an Epson S70 and it works great. I do run white and color at the same time.
As far as a UV roll-2-roll, Fuji has one. It is called the Acuity LED1600. I would look into that one if you are going to go that route!
I went from the D Series to the S Class T series and there is a reason they cost more! They are more than worth it!!! Way faster, more accurate and just all around better!

I'm not sure with flexi. I use caldera with my s70. I can setup 5 different layers of printing. You just need to use the outside high tension pinch rollers, as it'll print one layer then feed it back for the next layer. In caldera, you can tell it to do each layer just a spot, just color or spot...
