Easiest solution... downsize your staff.. take the jobs you want to take. Delay the others or reject them if they cant be done in time... Keep 1 or 2 skilled workers pay them well.. make sure they are happy.
Don't be scared by the many tools you'll probably find you only need to use some of them. You actually have it so much easier than when I started out! There was no youtube back then.. just had to play and learn...
