If you're going to right justify the top two lines of copy, I think you should justify the phone number to the right as well. The G needs to be freehand drawn from circles so it works with the gear, rather than against it. I'm also not sold on using all lower case for the second line of copy...

This seems like a logical way to do things and is something we need to employ around our shop.

We use stamps to mark invoices PAID or PAST DUE on a daily basis.

This is generally accepted as the correct answer and from my experience it is typically true. I'm surprised that a matte finish works better as gloss and semi-gloss finishes work the best for us with gloss offering the best adhesion. I wouldn't even try a matte or flat finish without testing...

It depends entirely on the font and even then round characters are going to be taller than letters that are not round. I would choose my font, size a character that is flat on top and bottom like E to 1" and then see what point size that puts you at.

A lot of agricultural companies around central Illinois also use the word ag as an abbreviation for agriculture and agricultural. It's pretty commonplace, but I agree that agriculture does tend to make a name sound more classy.

Sign layout? Yes. Logo? Not so much.

If you want good help you'll have to be more specific as to what type of printer, media, etc.
