GREAT work.
The only one that looks like it could use a bit of tweaking is the mist/aroma coming off of the cookies obscuring the text a bit too much for my taste.
We have two mimaki's here, and with proper care (and possibly some new parts) they are quite a workhorse.

My old one was a bit simpler than most posted here, but it did the trick for the small shop I was at.

Are you setting the plotter to "remote" before sending the job or after you click send/cut in onyx?
Ours is wonky if you send the job before the plotter is ready; but it is a mimaki.

There are many manufacturers out there, you may have to get in touch with the graphics division of the factory to se eif they have a record of what material is/was being used for this type of projects. Leo's Gold Lion is very popular, but other manufacturers use FirehouseDecals.com products...
I would recommend letting it sit 24 hours on the reel, but it hasn't ever caused a problem for me either. Most times, it sits around 12 hours before it has to rush over to laminating.
