It's a setting in the menus. I can't remember what it's called on Rolands but on other printers it's usually called clean during print or something similar. Just turn it off and it should do the trick.

Sounds like you popped the head fuse. Not sure where it is on that model but I can pretty much guarantee that's what happened.

Make sure the vacuum is turned all the way up and use the media guides. If you don't have media guides on your machine, look into getting some. Most printers come with them already installed but I have seen some that don't. The guides hold the edges down for you.

Check the bottom of the head for damage and/or debris. You might have had a head strike that damaged the head. Other than that you can swap the black and cyan dampers and run a cleaning. If the cyan comes through the black channel fine and the black does the same thing the cyan is doing, it has...

Check your head cables for damage or debris. You gotta figure out what's blowing the fuses before replacing them or they will just continue to pop.

The simple truth of it is, boxed profiles almost always won't print good grays. Custom profiles for your printer, media and environment will.

I'm not 100% sure if they are still doing it but a lot of my customers have upgraded to Rasterlink 6 for free. You deactivate your Rasterlink 5 and then download 6. You can use Rasterlink exactly how you used Versaworks. Just set the CutContour spot color and open it in Rasterlink. It should see it as a print cut job.

Ok that is a clear cut sign that the encoder strip is damaged or the sensor is failing. I would at least replace the sensor but to be safe probably the strip as well.
