You need to calibrate the sensor. Its documented in the owners manual but fine tuning is required and should do the trick. Many users are impatient about this process and don't do it right.
Simon the palettes you see are within the Gerber ColorId database and may not be up to date and I know some of them do not have Edge "firings" to print on.

On the Gerber ion we found it depends on the acrylic and how old it is.
Some brands work better than others. You MUST remove the protective film 24hrs before you print on it. If you don't the adhesion sucks due to the acrylic out gassing.

I've been using Omega 2.5, 2.6, 3.0 and now 4.0 on Windows 7 (64 bit) since the before it was release to the public with no problems. We do not have a Edge I/II output solution for any 64 bit OS yet. 64 bit OSs require 64 bit drivers which we will be working on next.

John, I'm almost positive that you should design your job as normal. In GspPlot select Reverse Print. I'm sure that the app will reverse the print over and apply the correct overprint attributes. If you can wait until Moday I will reply back unless someone else chimes in.
This is how Gerber got into the sign biz. Back in the late 70s the GSP division was looking to expand but they were not sure where to go. Someone picked up a phone book (remember those) and went through the yellow pages and noticed the number of pages for sign makers. The rest is history.
