Well, running faster usually means that you're going to loose accuracy. I wouldn't rely on specs to tell you how fast you can cut "your work" That's just a number as to how fast they'll let their motors spin.

You can only run one Edge at a time via USB on a computer. You're likely confusing the ports. Try unplugging the Edge 2 and see if the Edge 1 will work.
The service app requires a code from Roland that is tied to the serial number and good for three days. You'll have to work with a Roland tech for that.
I think there is a feed encoder disk on this printer that you can try cleaning. Also, if your black nozzle test isn't perfect at the ends it will throw your feed calibration off.

When I see scan motor errors, I always try cleaning the encoder strip first. Use an alcohol wipe or a lint free cloth with isopropyl alcohol. Costs nothing and more often than not solves the problem, especially if it errors out in the same area every time.

It's not unusual for the sheet cut blade to interfere with the pen block if it doesn't reset normally. As JB said, take a pen or pencil and push it in the left side of the carrage and make sure that the plunger is out (to the left).

It probably depends on the life expectancy of the print. If it's for a weekend promotional, you could probably get by without the laminate, but if the bus will be washed with the print on, it needs to be laminated. Overcoat is not a replacement otherwise no one would put laminate on vehicle...
They also have to pay that tech $50 per hour when he's not doing billable work as well, so they're not pocketing the rest. They're investing it in a system that supports their customers. Do they bill you for the time spent on the phone trying to figure out what's wrong before they come onsite...
I've never used anything but OEM, so I can't tell you what the difference is. I've seen many reports on this forum from members that I trust that say there is a difference. If you've had good luck with them, that's great. It may be an application issue.
