are the cans in your shop on are they in place and just need a new face? if in shop, there are a lot of ways to do a trace. if in the field it's harder but can be done. do you have the old face/faces? even if broken it helps

you can you a Sherwin Williams or Benjamin Moore paint that is for metal. you should be able to bring over a Pantone book and have them match it. just know that some blues and I think greens can be hard to match as the bases maek it a little muddy. I wouldn't use a laxen. another option would...
good grief, don't let a customer pick a font. if you do lettering where you do let a customer pick, just do a chart with a couple of block, serif and script fonts to pick from, not your entire list.
