We print a lot of customer-supplied files that contain spot white fills. We mostly use Spot1 (Onyx) but occasionally we use RDG_WHITE (Versaworks/Roland).

I'm sure it will physically print on polyester flag material, but you likely won't get the same quality as dye-sub. We haven't really run into any material that it won't print on, as long as you can feed it through the machine.
There's also the finishing aspect....do you have someone in place...

One other option (which comes with a hefty price tag) is to switch to Onyx which will allow your Roland and Summa equipment to play nice together.
We're still playing around with this ourselves but it is a little more complicated than you may be used to with Versaworks.
Having used Versaworks...
We got a UCJV and are liking it so far. We got the LUS 170 ink (cmyklclm) with LUS 200 white. We were also coming from Roland printers so a bit of a learning curve that way, Roland and Mimaki do things quite differently.
It's been working great for us so far and have about 6k sq.ft. run...
