I would go with laminate for ease of install (it's also more stable so it doesn't shift or stretch while applying from top to bottom). I would also use air release because the one we use is only $0.02 more per sqft.
That banner is definitely going to hurt their business. It doesn't look appealing or inviting at all to a potential customer that might walk by. I wouldn't eat there.

Your colour management setting is probably U.S. Pre-press. We get bolder logo colours and better greys with the Sign&Display setting. U.S. Pre-press does seem to give us more realistic colours when we're printing photos though.
Yes, if it's for VersaWorks, the spot colour just needs to be called "CutContour". I don't think it matters what colour you set it as - it's magenta in Illustrator but it's grey in Flexi. This may also work with other RIPs - not sure how standardized it is.
Effects > Document Raster Settings > Set an appropriate "proof" resolution for your artwork until it comes time to print, then turn it up to 75/150/300 depending on the application. Problem solved!
