We don't have the S80600 but we use the Epson Metallic ink in our Roland. Having used both I would say the Epson ink is superior to the Roland Eco Sol metallic ink. It is much finer and doesn't clog the heads anywhere near as much. I'd be happy to send you some samples, just shoot me...
If you regularly cut through the vinyl and backing paper, the cutting strip wears quickly and makes the blade blunt. Without the strip, the blade punches straight through the material.
Have you replaced the cap top? We normally replace the captop and wipers every 4 months. How old is the printer/head? The black always fails first on our VS series printers, purely because we print 100x more black than any other colour during the life of the head.

There is no such thing as a 911 Carrera Turbo GTS.
It's either a Carrera or a Turbo, and Porsche never offered a GTS variant of the 996.

Ok so today i removed the white and metallic cartridges to shake them as recommended. I put the white back in and the printer doesn't recognise the cartridge.
I looked down inside, pushed the flap down with a plastic ruler, and there is nothing physical obscuring the contacts for the cartrige...
How are you setting the spot colour? Maybe the spot colour name isn't being recognised in composer. Update the firmware maybe.
Why not set the vector to 100% yellow and put the chrome foil in instead of yellow.
In the end we just went direct to Oracal. Then Oracal made us go through their Swedish distributor who aren’t the best. But anyway that’s another story.
