I think you have the right idea here. You want something as easy as possible to install so it looks good on camera.
Your labor time will be what counts, not that the material will last longer than they need it to. The faster you get it on (and off) the more money you will make.
We use IJ35 when...
Can they hold two "American Sized" graphics installers? We're the guys OSHA had in mind when they put the 300lb limit on a-frame ladders.....

Those Band-it stainless clamps are used to hold traffic signals and road signs.
I've seen it used here to mount transformers to the poles.
Bolt a bracket to the sign and strap the bracket to the beam.
That beam will rust through before the clamp gives up.

Should be lots of options out there.
The Graphtec FC8600 lists a pounce kit as a $99.00 option.
Not sure how well it works but Graphtec plotters are pretty good.

Did your printer come with any software to drive it?
What brand of printer is it?
If your printer app will take ai paths and extrude & close them to add depth you should be able to export the paths out of SignLab as ai or eps and go from there.
I'm just guessing so I could be all wet.
Looks like the material is buckling up high enough for the head to make contact when it is moving back and forth.
I've noticed on my printers if I leave the material under the rollers for awhile and do not advance the material or reset the rollers it will do that on the next print. Material...
Rick,

Makes no difference, you can clip masked objects inside of of another mask.
As long as you shrink the art board down to the size of the new piece you want to print and enable the "use art board" option on export when you open it up in your RIP, it will be clipped to the size of the mask.
